Easy Comfort Dinner
Sometimes I want a dinner that feels warm and comforting but still simple enough for a weeknight. This creamy chicken mushroom pasta is one of those recipes I cook when I want something rich, satisfying, and easy to prepare.
The chicken becomes golden and juicy, the mushrooms add deep flavor, and the creamy sauce coats the pasta perfectly. Everything cooks in one pan, so the process is simple and the cleanup is quick.
Even if you are new to cooking, this recipe is very forgiving and easy to follow.

Ingredients
- 2 chicken breasts
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- 200 g mushrooms, sliced
- 200 g pasta (penne or fettuccine)
- 1 cup heavy cream (240 ml)
- 1/2 cup chicken broth (120 ml)
- 1/3 cup grated parmesan
- 1 tbsp chopped parsley
Cook the Pasta
Bring a pot of salted water to a boil.
Cook the pasta according to the package instructions until al dente.
Drain the pasta and set it aside. Do not rinse it, because the starch helps the sauce stick better.
Prepare the Chicken
Pat the chicken breasts dry with a paper towel.
Season both sides with salt, pepper and paprika.
Cook the Chicken
Heat olive oil in a large skillet over medium heat.
Add the chicken breasts and cook for 5–6 minutes per side until golden brown.
Remove the chicken from the pan and set it aside.
Cook the Mushrooms
Add butter to the same skillet.
Add sliced mushrooms and cook for about 5 minutes. The mushrooms will release water first and then start to brown.
Add minced garlic and cook for 30 seconds.
Make the Cream Sauce
Pour chicken broth into the skillet and stir to loosen the browned bits from the bottom.
Add heavy cream and stir gently.
Let the sauce simmer for 3 minutes until it starts to thicken.
Add grated parmesan and mix well.
Finish the Dish
Slice the cooked chicken into strips.
Add the cooked pasta to the skillet with the sauce.
Return the chicken to the pan and gently mix everything together.
Cook for another 2–3 minutes so the pasta absorbs the sauce.
Sprinkle chopped parsley on top before serving.
Common Mistakes
Overcooking pasta
Pasta should be al dente. If it is too soft, it will become mushy in the sauce.
Cooking garlic too long
Garlic burns quickly and becomes bitter.
Too high heat for cream
Keep the heat medium so the sauce stays smooth.
Cooking Tips
- Use freshly grated parmesan for better flavor
- Save a little pasta water in case the sauce becomes too thick
- Slice chicken after resting so it stays juicy
Storage
Store leftovers in the refrigerator for up to 3 days.
Reheat gently in a pan and add a little cream or broth to refresh the sauce.
