Ingredients (Measures for 4 servings)

For the meatballs:
— 1 lb (450 g) ground beef
— 1/4 cup (25 g) plain breadcrumbs
— 1/4 cup (60 ml) milk
— 1 large egg
— 1/4 cup (25 g) grated Parmesan cheese
— 1 garlic clove, minced
— 1 tsp (5 g) salt
— 1/2 tsp (1 g) black pepper
— 1 tsp (1 g) dried oregano
— 2 tbsp (30 ml) olive oil, for frying

For the sauce:
— 2 tbsp (30 ml) olive oil
— 1 small onion, finely chopped
— 2 garlic cloves, minced
— 1 can (28 oz / 800 g) crushed tomatoes
— 1 tsp (1 g) sugar
— 1 tsp (1 g) dried basil
— 1/2 tsp (1 g) dried oregano
— Salt and pepper, to taste
— Fresh basil leaves, for garnish

How to make it

1. In a small bowl, mix breadcrumbs and milk. Let sit for 5 minutes.
2. In a large bowl, combine ground beef, soaked breadcrumbs, egg, Parmesan, minced garlic, salt, pepper, and oregano. Mix gently with your hands until even.
3. Shape the mixture into 16 meatballs, about 1½ inches (4 cm) wide. Keep them uniform so they cook evenly.
4. Heat 2 tbsp olive oil in a large skillet over medium heat. Add meatballs, cook 3–4 minutes per side until golden brown. Remove and set aside.
5. In the same skillet, add 2 tbsp olive oil. Sauté onion until soft, about 5 minutes. Add garlic and cook 1 minute more.
6. Pour in crushed tomatoes, sugar, basil, oregano, salt, and pepper. Stir well and bring to a simmer.
7. Carefully add meatballs back into the sauce. Cover and cook on low heat for 15 minutes, turning meatballs once halfway through.
8. Remove lid, cook 5 more minutes to thicken sauce. Taste and adjust seasoning.
9. Serve meatballs hot, spooning sauce over them. Garnish with fresh basil.

Tips and common mistakes

— Don’t overmix the meat: gentle mixing keeps meatballs tender.
— Brown meatballs first: this locks in flavor and texture.
— Simmer sauce gently: too high heat can dry out meatballs.
— Use fresh garlic for best taste.

Substitutions

— Ground pork or veal can replace beef for a mixed-meat version.
— Use gluten-free breadcrumbs to make it gluten-free.
— Swap dried herbs for 1 tbsp fresh chopped basil and oregano.

Storage instructions

— Fridge: Store meatballs and sauce in an airtight container for up to 3 days.
— Freezer: Freeze portions in a freezer-safe bag for up to 2 months. Thaw overnight in the fridge and reheat gently on the stove.
